Vegan Eats pt. 4

Welcome back to our favourite section of this blog – Vegan Eats!  We are slowly drawing towards the end of our campaign and wanted to share with everyone one of our all time favourite brownie recipes.  You may have noticed that all these past recipes we have shared are never particularly complicated.  That is because when it comes to baking, none of us are really gifted in that department with the exception of these brownies.  These somewhat healthy brownies are the perfect balance of cakey and fudgey and are the perfect snack to indulge those chocolate cravings we all get from time to time.

For this recipe you will need:

  • 1.5 cups flour
  • 1 cup of cacao powder
  • pinch of salt
  • 3/4 tsp baking powder
  • 1 tsp vanilla essence
  • 2 chia eggs
  • 1 cup coconut sugar (or any sugar of your choice)
  • 1/2 cup of vegan butter (Nuttelex works best and can be bought from Coles and Woolworths)
  • Choc chips or nuts (optional)

Instructions:

  1. Preheat oven to 180 degrees if fan forced otherwise 200 degrees
  2. Prepare chia eggs by mixing 2 tbs of chia seeds with 4 tbs of water and mixing or rest aside for 1o minutes until chia seeds become thick and of ‘egg’ consistency
  3. Melt butter in a bowl then mix in all ingredients except for the flour
  4. Once all ingredients have been mixed, carefully fold in the flour
  5. Align the mixture in a brownie tin or even cupcake moulds and bake for 15-20 minutes
  6. Try not to eat it all in one go
